Yesterday was a day with little appetite and no idea what to eat. I may spend a lot of time on social media where i see alot of different food but that doesn’t always make it easy to decide what to eat.
When i lose my appetite and don’t feel hungry, nothing seems appetizing… i just see and think of food and nothing makes me want to eat, not even my typical favourite foods or meals. But i know i have to eat something. So i began to look through some of my saved food photos to see if something could inspire my dinner creation, and the only thing i wanted was dumplings and onion rings, so i went to the store to buy those. However when i got there i saw that both of those were sold out, so then it was just to wander around the store (i.e 30 minutes) until i figured out what i wanted and i settled on making pasties with puff pastry (which is almost always vegan here in Sweden as margarine is cheaper than actual butter!).
Then when i got home it was just to start cooking:
What you need:
Puff pastry – i used the whole package so 10 pieces and i let them defrost on a baking paper while i prepared the filling.
Your desired filling: I choose spinach, tofu, mushrooms, onion, garlic, mixed beans and sweet corn & seasoning.
How to make the dish:
Fry together the onion and garlic, add the spinach, crumble tofu and add the rest of the vegetables. Fry until it’s a mix, pour away the excess water (if you have used frozen veggies/spinach!).
Spoon a little onto the puff pastry sheets, fold over and with a fork make dents so that the puff pastry edges stick together.
Into the oven for 10 minutes on 225 degrees.
And then eat!!! And they are delicious the day after as well 🙂
A very simple meal to make, which i love as i don’t like complicated meals or meals that take forever and a day to cook, also very little dishes to be washed afterwards which is always a plus!!
