I excuse the lack of posts recently, lots of school work and reading to be done and also had Wi-Fi problems at home which has made it hard to write posts as many nutrition and vegan posts require research and Googling which is hard to do without internet! However, one thing you can do when there is no wifi and you have finished all your school work for the day, that is to bake! And that is exactly what i did yesterday.
I made this banana bread a few weeks ago, however i managed to eat it all before i got time to take pictures or post the recipe! I changed the recipe a little this time and it turned out a little more dense and not as fluffy as previously, however the recipe isn’t one that will result in a very fluffy bread – as then it would require yeast and yeasting time!
This bread is incredibly delicious and doesn’t need much sweetener due to the sweetness from the bananas 🙂 And you can change the flour to whole grain or even oat flour should work – it might not be as compact and dense then, and also adding seeds and nuts on top or chocolate chips into the mix can be done!
This recipe may not be *perfect* but i will share it nonetheless, however there might come a vegan banana bread 2.0 in the future 🙂
4 bananas (medium size)
4 tbs oil/melted butter
1,5tsp baking powder
Sweetener – c.a 0,5dl syrup/agave or use 2-3tbs sweetener or vanilla drops
Optional: chocolate chips, vanilla powder, cinnamon, peanut butter, seeds
Put the oven on 175 degrees celsius.
Place baking paper into a bread pan or grease the bread pan
Mash together the bananas (they need to be ripe so that they are soft enough to do this, but also sweet enough). Add the sweetener and oil/butter to the mix.
In another pot mix together the dry ingredients, and then add to the wet ingredients.
Place in the baking pan and into the middle of the oven for c.a 40-45 minutes.
This recipes requires few ingredients and super simple to make 🙂 But as mentioned, a few changes may need to be made to improve the recipe, but it works for now!
