Last year i made this green kale pie with tofu and onion, topped with walnuts and it was a hit. So i think i will be making a similar pie 🙂
The recipe below is for 4 people, so you could double it and make 2 pies in 2 different forms 🙂 Or everyone just needs to take a small slice, hahah!
Ingredients:
Pie dough:
125g vegan margarine3,5dl flour
2 tsp water
pinch of salt
Filling:
1 red onion
250g tofu
400g kale (washed)
100g vegan cream cheese
0,5dl oatcream
c.a 1dl walnuts
Salt and pepper
Optional: Grated cheese to add ontop. (ex Violife mozarella or the block cheese which you grate yourself)
How to:
Mix together the ingredients for the pie dough. Note the margarine shouldn’t be melted – you just crumble it together to make a sort of dough. Press the dough into your pie form (about 24 cm in diameter). “Poke” the dough with a fork a few times (makes for a better and more thorough cooking) and place in the fridge for about 30 minutes.
Then bake the pie crust for 10 minutes at 200 ° C.
While the pie dough is either cooling or baking you can chop the onion into small pieces and fry in some oil, place into a separate bowl. Then cut the tofu into small cubes and fry them with salt and pepper. If you are using fresh kale boil them for a few minutes in salted water.
When the tofu have begun to get a golden brown surface, add the either frozen green kale or the boiled kale.
Then add the cream cheese and oatcream into the bowl with the onion.
When the tofu and kale mix has begun to soften and mix together add into the onion and cream cheese mix. (Note, if the kalemix is very watery, pour away the water before adding to the cream cheese mix).
Mix it all together adding salt and pepper if necessary. Then pour the filling into the pie dish, top with walnuts (and optional, add grated cheese) and bake for about 30 minutes at 200 ° C.
Hopefully this recipe is understandable, hahah. I tried to write so it didn’t seem so complicated, but at times it feels like the more simple i write the recipes the more complicated they seem/are to make!
