I know i shouldn’t – and don’t have to – but i still feel the need to apologize for not blogging. I guess because i have been blogging for about 8 years now and have done it almost daily i always feel a little guilty when i go several days without blogging…. that is unless i have made the active choice to not blog for mental health reasons or other reasons.
For now, i just have other things in my life and other work/school work going on so haven’t had the time to write… not to mention haven’t had so much creativity or post ideas. Because i am writing so much about nutrition in my ebook i don’t feel like making posts about it here, but also all the recipes i am making and food i am eating is going to be in my ebook so i can’t publish it here…. and sometimes with vegan posts i don’t know what to write about because somethings seem obvious to me but for new vegans it isn’t….. So it leaves me with not so much to write about on here when i don’t have any new recipes, nutrition or vegan advice to share.
So feel free to comment post ideas or questions so i know what you want to see more of or if you have any questions 🙂
Sunday and tomorrow is the start of my new course, public health. Not fully sure what i will be learning in the course but i guess about public health and everything in that topic area! So i guess more about heart disease, diabetes maybe cancer and nutrition and lifestyle related to public health. It will be an interesting course, but if i am honest i am a little unmotivated with school at the moment. Most of all i am just ready to work!! But only 1,5 years left before i get my bachelors, and i know the time will pass quickly… and of course, i can still work while studying… small steps towards my goals everyday!!
Trying to balance everything in my life right now and the blog is taking a little bit of a back step while i focus on other things, but i still aim to update it several times a week anyway 🙂 But maybe focus more on quantity rather than quality!!
Just a little update from me, and i do have a recipe to share next week… it was one i made when i was at home with my parents and i thought i might share it in my ebook but never got around to actually taking a photo of the recipe and it was good…. but i never wrote down any exact measurements and i felt i rather share it on here, so that will be up next week! 🙂

Also yesterday i made some scones which i ate for as a night snack as well as breakfast today. I’ve posted the recipe HERE and they are so good according to me. I usually do 50/50 flour and rolled oats, but also use just aquafaba instead of milk and they turn out so good. A quick and easy bread option if you are craving bread 🙂
