Barbeque fried tofu and potato taco bowl – vegan recipe

Friday and i was craving a taco bowl! Of course, no regular taco bowl…. instead made with paprika roasted potatoes, barbeque tofu as well as guacamole, beans, roasted carrots, tomatoes, sweet corn and red onion.

This meal turned out SOOO good and was exactly what i was craving. Fresh salad, roasted vegetables, delicious tofu and perfect guacamole! A difference from the winter stew i ate yesterday!

How to make the BBQ tofu:

Ingredients:

c.a 200g tofu (press it for c.a 30 minutes to get rid of some of the water)

Cornstarch/corn flour

BBQ sauce: Either store bought or make your own:

100ml ketchup

1tbs apple cider vinegar

c.a 1tbs olive oil

Pinch of sugar/syrup – according to taste

1/2 teaspoon pepper

1/2 teaspoon smoked paprika

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon chili powder

c.a 50-80ml water

(Ratio of ingredients for the sauce can vary! Add more or less according to taste).

How to:

Begin by pressing the tofu for c.a 30 minutes.Β  While the tofu is being pressed mix together the barbeque sauce if you are making your own.

Then cut the tofu into cubes and roll in corn flour before frying in a pan until golden brown.

When the tofu is golden brown take it out of the frying pan and mix with the barbeque sauce. (Note, can add to a parchment paper and bake in the oven for 5-10 minutes. But i ate mine as it was, mixed in the sauce!)

For the rest of the ingredients in the bowl, i just roasted carrots and potatoes in the oven with some paprika powder, salt and oil.

Made guacamole with 1 whole avocado, some lime juice and herb salt. And the rest of the ingredients it was just to open the package/jar and chop the onion!
