Vegan pad thai recipe!

For a while now i.e several weeks i have wanted to make pad thai but never gotten around to actually making it. I’ve thought it would be too complicated and the recipes for the sauce which i have seen have always required so many different spices and sauces and i didn’t feel like buying all those ingredients.

However i decided it was time to finally give pad thai a go – and made the sauce from the ingredients i had at home! And it turned out amazing… the slight bit of sweetness with the peanut butter/saltiness of the sauce. The crunch of the peanuts, the perfectly fried tofu!! I thought i would have atleast 4 servings, but i will be lucky if it will last for 3 meals, hahah!

Also i know pad thai usually has tamarind/tamarin sauce which i didn’t have – and don’t know how important that is for the authentic pad thai taste. Also i have never actually had pad thai in a restaurant or had the “authentic” dish, so this might not be exactly similar… now so sure! But nonetheless it is delicious and you should try it if you get the chance!!!

Ingredients:

1 package rice noodles

1 block tofu (c.a 200-250g)

c.a 60ml soy sauce

c.a 100-120ml lime juice

2-3 tbs peanut butter (smooth)

2tbs sriracha/or hot sauce

c.a 60ml sweetener or sugar (or syrup) (vary according to personal taste!)

1 onion, diced

3-4 colves garlic

2tbs oil (ex peanut or sesame)

1-3tbs oat cream (this is to thin the sauce)

Peanuts

Bean sprouts, wok vegetables

 

How to:

Begin by cooking the noodles according to the pacakge. If using frozen wok vegetables – heat them up at the same time. If not, begin to dice and chop the wok/pad thai vegetables you plan to use.

In a bowl whisk together the soy sauce, peanut butter, lime juice, sriracha/hot sauce and sweetener.

Dice the onion, crush garlic and cut tofu into cubes. Fry all 3 in a pan with some oil – fry until the tofu is golden brown and crispy.

When the noodles have finished cooking pour away the water and add the noodles and vegetables to the frying pan with tofu.

Add the peanut butter/soy sauce mix to the noodles and tof and stir until well combined.

Once done plate up and add crushed peanuts and bean sprouts on top.
