Crispy sweet potato fries…. who doesn’t love them??! However home made sweet potato fries never turn out as crispy as i like – they always end up a little mushy – which i don’t mind, but it is not the same as the sweet potato fries you get at a restaurant.
If you want really crispy sweet potato fries, then the best is to buy frozen sweet potato fries which you then deep fry in oil…. however, not everyone can or wants to deep fry and not everyone wants to eat frozen and premade sweet potato fries. So how do you get crispy fries with regular sweet potato? Well here is a recipe/tip for you!!
So there is a long version and a short version, and both turn out good!!
The long version:
Begin with peeling the sweet potato and cutting into as thin fry shapes as possible. The thinner they are the more crispy they will get.
Then in a big bowl pour cold water and place the sweet potato fries in the water. Allow to sit there for c.a 30 minutes+ . This washes off some of the starch which will make the fries crispier when you bake them.
Then take the fries out of the water and dry them slightly. Continue to the next steps:
The short version: (You skip the process of placing them in cold water and just do the steps below)
Preheat the oven to c.a 225degrees celsius.
Place the fries in a new dry bowl and add your seasoning of choice – i chose paprika, chilli and salt. Then add c.a 1 tbs corn flour (the amount you need depends on how many fries you are making. I used one whole medium sweet potato and 1tbs was enough). Mix the fries together with the seasoning until well combined. Then add 1-2tbs oil and mix until well combined. (Note – can do this step using a plastic bag as well so that everything is well coated.)
Then place the fries on a baking paper with a little space between each fry.
Bake in the oven c.a 15 minutes. Take out of the oven and add a little more oil (if necessary) and turn the fries over before baking c.a another 5-10 minutes. Note, you can also turn the heat up to 250degrees celsius the last 5-10 minutes to get them really crispy – but then you want to make sure you don’t burn them!!
This was the first time that my fries turn out incredibly crispy and delicious!!!
Important to note use too much cornflour because then it can give the fries a flour-taste.
Also i do recommend using oil to get them crispy, often the fries will just bake but not turn crispy if you don’t use oil!
And like mentioned above, the thinner the fries the crispier they will get!! :)
