Somedays i don’t know what to eat and my appetite is gone completely. It is easy to just skip eating because i don’t feel hungry, i.e listening to my body and eating when i am hungry and not eating when i am full. But somedays you just gotta make yourself eat because you know that even if you aren’t hungry, you need to eat something. Whether it is the heat, sickness or the fact that i hit my head rather hard the previous day and have had migraine/extreme headache all day…. i have not felt hungry.
I didn’t feel like cooking either and didn’t have any meals prepped (well, aside from leftovers from lunch), so that resulted in me making 2 things i know i can always eat no matter if i am hungry or not.
Roasted potatoes and guacamole…. but decided to mix it up and add peas to my guacamole!
Recipe:
Potatoes – as many as you want
Oil and seasoning
Pea/avocado guacamole:
c.a 300g frozen peas (defrosted)
1 whole avocado
c.a 50-75ml oil
Salt
2-3 garlic cloves
How to:
Preheat oven to 220degrees celsius.
Begin by peeling and chopping the potatoes into desired shape/size. Place the potatoes onto a baking plate with baking paper.
Drizzle some oil and salt, and seasoning of choice over the potatoes. Mix so that they are all coated and then bake in the oven c.a 25-30 minutes, turning over half way.
In the mean time, make the pesto.
Begin by deffrosting the peas either in the microwave or by boiling them.
Chop an avocado into small pieces and add to a bowl, or an electric mixer. Add the defrosted peas and add some chopped up garlic. Lastly add some salt and pepper and c.a half of the oil. Begin mixing with a handmixer or in your electric mixer, and add more oil as it mixes.
Once the potatoes are done – eat warm with the guacamole 🙂
There you have a simple meal with carbohydrates, protein and fat! You can even add some soya yoghurt or silken tofu to the guacamole mix to increase the protein without having to prepare an extra food 🙂
And with that… i am checking out for the day. Feeling like i have been hit by a bus despite doing nothing today, hahah!
Note, this pea/avocado mix can be mixed into pasta as well or ontop of baked potato or any other dishes!!
