Now that it is VM football ( not that i am watching or keeping track), you may want some snacks while watching the football. Then i present to you… baked cauliflower “wings”!!
Do they taste the same as chicken wings, of course not. But they are actually very delicious, the trick is to get the seasoning and sauce right! And of course, the best is to use fresh cauliflower, but frozen works as well!
I have two other cauliflower wing recipes you can try:
I personally think the two recipes above are better than this recipe, hahahah, i don’t mean to deter you from testing this recipe! These do taste very good and are more crunchy and not as messy to prepare!
Recipe (for 1 portion/person):
1/2 cauliflower head – cut into small florets (You can defrost frozen cauliflower as well).
c.a 100 – 200ml breadcrumbs (I didn’t measure or weigh, but pour a little into a bowl and add more if necessary). Note, you can also use panko or crushed cornflakes as coating.
c.a 100ml aquafaba (which is the liquid from a tetrapack of chickpeas)
Salt & seasoning
Begin by either chopping fresh cauliflower into small florets, or defrosting frozen cauliflower.
Heat the oven to 220 degrees celsius and line a baking pan with parchment paper.
Then in a bowl pour some bread crumbs (or alternative). Add salt and seasoning to the bread crumbs and mix.
In another bowl pour the aquafaba and add seasoning to the aquafaba as well. Note, you can even mix aquafaba with example barbeque sauce so the cauliflower has extra taste!
Then begin by first dipping the cauliflower floret into the aquafaba, then coating it in the bread crumbs. Place onto the baking pan and repeat with all the florets.
Bake in the oven c.a 30-40 minutes. After half the time, take the cauliflower out of the oven and drizzle over some oil for extra taste and crispiness. Turn the cauliflower over and place back into the oven for the remainder of the baking time.
When done, serve with some sauce! Example guacamole, barbeque sauce, pesto, roasted paprika hummus
