If you only have 15 minutes to prepare lunch and want a nutritionally balanced, quick meal then this is for you! (Of course you could make it even quicker by just boiling pasta, adding brocolli and peas to the mix and serving the dish with an avocado. If you want to skip the whole process of making the sauce haha.)
This meal is quick to make and is balanced nutritionally i.e carbs, protein, healthy fats and fiber!!!
Pasta of choice
C.a 300g peas (dethawed)
1 avocado
c.a 50ml oil
Salt
2-3 garlic clove
Oat cream (no exact measurement)
Optional, silken tofu for creaminess
Optional, nutritional yeast
How to:
Begin by boiling the pasta according to instructions.
In the mean time, make the sauce.
Begin by defrosting the peas either in the microwave or by boiling them.
Chop an avocado into small pieces and add to a bowl, or an electric mixer. Add the defrosted peas and add some chopped up garlic. Lastly add some salt and pepper and oil. Begin mixing with a handmixer or in your electric mixer, and add oat cream to while mixing to get the right consistency.
Note, you can add silken tofu and nooch for extra taste abd creaminess.
When the sauce and pasta is done, mix together ans eat warm or cold!
This makes a lovely change from the usual tomato based pasta sauces people tend to have and it looks so simple to make!
