When the coldness and darkness is creeping in, i begin to replace the salads and summer rolls with warmer dishes. This dish can be enjoyed both warm and cold, and is a great way to use up leftover vegetables. I don’t know about you, but i am the type of person who will leave 2 carrots and 3 potatoes left in the fridge when i could just prepare all the potatoes at once….. But that makes for dishes like this!
