Vegan vegetable tomato casserole!

When the coldness and darkness is creeping in, i begin to replace the salads and summer rolls with warmer dishes. This dish can be enjoyed both warm and cold, and is a great way to use up leftover vegetables. I don’t know about you, but i am the type of person who will leave 2 carrots and 3 potatoes left in the fridge when i could just prepare all the potatoes at once….. But that makes for dishes like this!

A vegetable tomato casserole, with tofu and extra garlic!!

If it’s a cold, gloomy day then make this dish and enjoy with some roasted potatoes or rice and a huge dollop of oat creme fraiche!!
