Vegan saffroncake with white chocolate and lingonberries

Need a last minute New Years eve cake idea?

Then making this saffron cake with white chocolate and lingonberries is a quick go to cake!

Of course there are many desserts out there – some more complicated and time consumining and others less complicated and require less time. Ex. chocolate mousse, make parfait with soya cream, digestive biscuits, banana etc Or even a simple chocolate cake with some soya whipped cream is a delicious  and quick dessert idea!

The recipe for the cake: 

50g vegan margarine

1g saffron

240g flour

135g sugar

1 tbsp baking powder

pinch of vanilla

250ml oat milk

100g vegan white chocolate

Lingon berries, or lingonberry jam. (Note, other berries or jams works as well!)

How to:

Preheat the oven to 175 degrees celsius, and grease a cake form.

Begin by melting the margarin and allowing to cool down.

In a baking bowl, combine the dry ingredients. Mix until well combined.

Add the wet ingredients – the oatmilk and the melted margarine. Mix together and then pour the mix into the cake form.

Bake in the oven for 30 minutes.

Once the cake is done, take out of the oven and allow to cool down. In the mean time, melt the white chocolate and combine with lingonberries or lingon jam. Pour the mix over the top of the cake.

Eat and enjoy!!
