Creamy cauliflower and tofu curry with sundried tomatoes

Do you ever decide to just throw together some ingredients to make a meal, and it turns out amazing? Well that was the case with this recipe.

I didn’t know what to make… all i knew was that i had some cauliflower that needed to be used. The meal i managed to throw together turned out to be one of my new favourites… infact, now that it is all gone i am thinking i should make another large batch.

Of course the downside of just throwing together foods – like i did with the lentil bolognaise – is that i didn’t measure anything and can’t give any exact measurements. Though it isn’t really needed in this case… you can just season according to preferance!

1 small head of cauliflower

1 small sweet potatoes

1 can full fat coconut milk

1/2 yellow onion

3 cloves garlic

Some ginger – chopped into small pieces

Tomato pasta, c.a 2 tbsp

3/4 jar of crushed tomatoes

1/2 block tofu

1/2 can chickpeas

1/2 jar sun dried tomatoes

C.a 1-2tbsp cornstarch

Curry c.a 1tbsp

Pinch of turmeric

Cayenne pepper

Salt and pepper

Optional: Some brown sugar and/or peanut butter

Also, i added salted peanuts on top which was the perfect added touch!!

Combine with some boiled rice/bulgur/quinoa

How to:

Begin by chopping the cauliflower into florets, as well as peeling the sweet potato and chopping into small pieces. Boil in some water until soft.

In th mean time, dice the onion and garlic. Fry in a pan with some oil along with the garlic. Add the tofu (in small squares), and eventually add the chickpeas. Allow to get slightly crispy.

Once the cauliflower and ssweet potato are soft, add to the frying pan along with the coconut milk and tomato paste. Add the sundried tomatos as well as your seasonings. Add the crushed tomatoes if needed (or more coconut milk if you have).

Add a tablespoon of cornstarch to the mix – so that it thickens. Allow to simmer on medium heat. Eventually add more cornstarch if it doesn’t thicken, however let it simmer for atleast 10 minutes so that all the flavours mix together.

In the mean time, don’t forget to boil some rice or bulgur to go with your meal… and why not add some extra veggies?

Once done, eat warm or make some meal prep for the week?
