Vegan french toast

French toast…. the perfect breakfast in many ways.

1. You are using up stale bread

2. It’s like pancakes but you don’t have to make pancake batter and deal with that mess

3. You don’t need a waffle iron

In the past i have made french toast sticks, french toast in the airfryer and a french toast casserole. But i feel like this may be the best recipe yet! Or maybe i was just super hungry…. that is up to you to decide!!!

This recipe is sugar free, aside from the natural sugar in the bread. And you could possibly make this gluten free by skipping the flour and using a gluten free bread, however i can’t guarantee the results will be the same.

You can add some nutritional yeast to the batter, which adds a cheesey/eggy flavour which French toast usually has.

And lastly… you can swap the aquafaba for plantbased milk and swap sweetener for sugar if you like.

My recommendation is to use a sturdy bread… or if you use bread slices like i did. Then leave them out on a plate overnight or roast in the oven at 150c for about 3-5 minutes, just to make sure they are fully dried out.

This also ensures that they won’t just crumble or fall apart when you dip into the batter.

For 3 slices of bread – recommend doubling this if you have sturdier bread


3 slices of bread, preferably stale/slightly dry

2,5 tbsp chickpea flour

1tbsp flour

9tbsp aquafaba

Pinch of salt


1-2tbsp sweetener

Margarine or oil to fry in

Toppings: banana, berries, vegan nutella

How to:

Begin by mixing together the chickpea flour, flour, sweetener, cinnamon and pinch of salt. Then add the aquafaba and mix until a batter like consistency has formed.

Take your dry/stale bread and dip into the batter. 1-2 seconds each side should be enough.

Then place in a frying pan with some vegan margarine and fry on medium heat until golden brown on each side. Repeat.

Also you can double the amount of batter if making more slices.

Eat warm with some berries, banana and vegan nutella!!!

This is definitely a dish i will be making again soon 🙂
