Baked tomato-balasamic toast (Vegan breakfast idea!)

Toast….. BUT FANCY.

Oh yesss… take that average toast breakfast and make it 10 times better, you will definitely impress your friends, partner or family with this breakfast (or snack!).

RECIPE:

Bread of choice (freshly baked is to be recommended!)

Hummus, storebought or homemade (white bean hummus also works)

cocktail tomatoes, or other form of mini tomatoes

Balsamic vinegar

Aceto balsamico (which is thicker than just balsamic vinegar)

Avocado

Parsley

Salt and pepper

How to:

In a baking tray add cocktail tomatoes. Drizzle over some oil, salt and balsamic vinegar. Bake in the oven for 15-20 minutes at 180C.

Grab your favourite freshly baked bread, such as a sourdough bread. Slice into thick slices and roast in the oven for a few minutes to get toasty. (around 3-4 minutes is usually enough)

Make some hummus if you don’t have a storebought one, but i do recommend making your own. (Chickpeas, tahini, lemon juice, oil, salt, water -> mix until smooth).

Once the tomatoes are done and the bread is toasty, add a layer of hummus. Add some avocado, then the tomatoes and some parsley. Drizzle some aceto balsamico ontop.

Eat and ENJOY! Because yes, you will definitely enjoy this toast.
