The best roasted potatoes

Ok…. so i am sure you have eaten roast potatoes before. I mean who hasn’t. But i am going to teach you how to make THE BEST roasted potatoes. Once you try it this way, you just won’t want to go back to regular roast potatoes. Yes, i know it takes longer to make it this way but it is worth it i promise you.

Infact writing this post makes me want to run to the kitchen and begin making some of these roasted potatoes!!

So in the past i am sure you have just peeled, chopped and roasted the potatoes in the oven with some seasoning and oil…..? Let me teach you how to improve this method.

900g potatoes (a firm type, not floury)

60ml vegan margarine, melted (not exact measurement)

Crushed garlic (2-3 cloves)

Parsley, diced

Salt & pepper

Optional, vegan parmesan

How to:

Begin by peeling the potatoes and chopping into desired shape, then boil until parboiled. Around 5-7 minutes, they should be slightly soft.

Preheat oven to 200C.

Once the potatoes are parboiled, pour away the water and place the potatoes into a form. Pour over some salt, pepper and parsley. Bake in the oven for 20 minutes. Then take out of the oven and pour over some melted margarine (or oil), add some crushed garlic and black pepper. Optional, some vegan parmesan. Mix until the potatoes are fully coated. Then place back in the oven for 10-15 minutes. Take out when crispy!

Eat warm with some sauce. Such as tzatziki, a garlic dip or why not a lemon tahini dip!
