Vegan carrot cake muffin bread

Is it cake, muffins or bread? Well to be honest i don’t fully know, but it is delicious nonetheless!

Carrot cake is one of my top 5 favourite cakes, and i decided to make an adapted version of the beloved carrot cake!

If you have time over and love carrot cake, then definitely give this a go.

RECIPE

260G ALL PURPOSE FLOUR

90G ROLLED OATS

1/2TSP BAKING POWDER

1/2 TSP BAKING SODA

180G BROWN SUGAR (OR USE CASTER SUGAR)

1TSP CINNAMON

1/2TSP POWDERED GINGER

1/2 TSP CARDAMUM

1TBSP VANILLA SUGAR (OR POWDER)

PINCH OF SALT

120ML OATMILK & 120ML AQUFABA (LIQUID FROM A CAN OF CHICKPEAS) [OR JUST USE 240ML WATER OR MYLK)

80ML MARGARINE MELTED, OR OIL

2 BANANAS – MASHED

2TBSP SYRUP

2 CARROTS, GRATED

OPTIONAL: HANDFUL OF RAISINS AND WALNUTS

FOR THE FROSTING:

VEGAN CREAM CHEESE (225G). POWDERED SUGAR (OR POWDERED SWEETENER). VANILLA. PINCH OF CARDAMUM. A FEW DROPS OF LEMON OR ORANGE JUICE. 1 SMALL CARROT GRATED.

HOW TO:

Preheat oven to 180C and grease a form. I don’t know the exact size of the form i used, but you can see the size of the cake/loaf in the pictures. It does rise in the oven.

In a baking bowl mash the bananas, add the syrup (2tbsp), aquafaba (120ml), milk (120ml) and oil or melted margarine (80ml). Set aside.

In another bowl, sift together the flour (260g), baking powder (1/2tsp), baking soda (1/2tsp), cinnamon, cardamum, ginger, salt and sugar. Att the oats and mix.

Pour the wet ingredients over the dry ingredients and mix – note, DON’T over mix. Add the grated vcarrots along with raisins or walnuts if using.

Pour into the greased form and bake in the oven around 45-50 minutes (keep an eye on it and poke with a potato stick in the middle of the cake after 30-35 minutes to see if it is done. It is done when the potato stick comes out “dry”).

In the mean time, make the frosting by mixing together all the ingredients. I didn’t measure the amount of powdered sugar i used, but start with around 100ml and taste test to see the sweetness.

Once the cake is done, take it out and allow to cool fully before topping with the frosting and some grated carrots! Eat and enjoy 🙂

  1. I just made some carrot cake muffin/cupcakes for my parents anniversary, and now I wish I would have included cardamom in the recipe! It looks delicious!
