Sweet potato burger buns with @anamma_sverige soy mince burgers and airfryed potatoes 😍 Mixing up the vegetable stews and salads with some fake meats and processed foods 😏🤤 ~ Processed food gets alot of bad rep. Which of course is understandable... however people forget that things like pre chopped and packaged fruits, pasta sauces, frozen vegetables, canned beans all count as processed foods ~ Processed food = food that has been cooked, canned, frozen, packaged or changed in nutritional composition sith fortifying, preserving or preparing in different ways. ~ I.e the food has been processed in some way. And doesn't automatically mean unhealthy. ~ Frozen vegetables, frozen berries, canned beans... all very healthy even if they count as "processed foods". ~ Of course the highly processed foods with alot of salt and saturated fat should be eaten in moderation... but just because they're processed doesn't mean they're unhealthy. ~ It's also important to not forget that buying unprocessed foods can be considered a privilege as they can be more expensive or take alot of time to prepare which not everyone has. ~ Just like e numbers... processed foods and e numbers aren't necessarily unhealthy. It's about which ones and the amount you eat of them 🙌🙌👌 ~

It's MEALPREP Monday and "use the fresh produce you have at home" type of meal. 60% of my meals look like this.... but swap the fresh salad for heated frozen vegetables, add a bunch of beans, avocado and hummus 🤷‍♀️ Big bowls of food are where it's at 🙌🖐 ~ This was my dinner yesterday and the remainder from the ricepaper rolls i made! And the last ricepaper roll i forgot in the fridge when eating lunch!! ~ The tofu was marinated and fried in a BBQ/peanut sauce. You can search my blog for "BBQ tofu" to find the recipe 😊😊 ~ Also... don't let anyone tell you you eat too much. This bowl may look like a lot of food but it really isn't that much energy. If you eat alot of vegetables you will need higher volume food. Of course you need MORE than vegetables, but if your diet consists of predominantly plantbased/whole foods you will be eating more volume. Prolong summer and make summer rolls.... or so called ricepaper rolls 😍 ~ It's also a good way to get in a bunch of vegetables!!! Fill them with marinated tofu or tempeh, rice noodles, red cabbage, carrots, cucumber, bellpepper, avocado or any other vegetables that may suit :) ~ And of course... don't forget the dipping sauce! A peanut butter sauce is the way to go. Need a new breakfast idea... or maybe just some inspiration on how to vary your oatmeal? Here is one!!! Oatmeal with cinnamon fried apples 😍😍 ~ (Note* you can fry the apples in just water or some coconut oil. And you can use sugar free syrup ... or stevia if you want more sweetness!). ~ Also... you can turn this into overnight oats, by adding everything into a bowl or jar, adding enough plantbased milk to cover it all, and extra.
