Full day of eating – Vegan

I’ve been requested so many times the past few weeks to share full days of eating on my instagram – and to share more of my meals, which i have been doing on my story on my instagram account – but i don’t share all my meals! There can easily become too much focus on food which i don’t know – also that it can lead to comparison of diet and intake which isn’t good. However it seems to be highly requested and appreciated with showing more of my meals – so here is what i ate yesterday as i pictured almost everything!

How much and what i eat varies each day and usually i prefer 3-4 bigger meals per day i.e breakfast/lunch, dinner and a big night snack. But yesterday i felt more hungry and wanted more inbetween snacks, so that’s what i ate. Also yesterday the only thing i did was study/go to a lecture & a 30 minute walk to school, but otherwise it was study from c.a 11am until 8pm.

Breakfast: 2 scones with vegan spread and cheese & a banana afterwards


Lunch: Pasta with a mushroom and oumph sauce (left overs from the day before)

Snack: Banana and 2 pieces of chocolate. (If you combine the white chocolate with milk chocolate it tastes like kinder bueno *sort of*)


Dinner: (Which i had prepared in the morning) Cauliflower wings, pickled red onion, avocado, roasted chickpeas, half a baked sweet potato (which i mashed with some salt and sesame seeds), tofu fried in some oil & 1/2 an avocado


Night snack: All i was craving was plain oatmeal with salt, so that is exactly what i had. C.a 2 portions of oats with oat milk and salt. I usually love lots of toppings on my oats – but sometimes i just want to keep it simple and don’t crave any toppings… not even my home made jam or peanut butter. I guess the body just knows what it wants/needs!


I have no idea how many calories i ate or macros – and i don’t care either. I listen to my body and what i ate yesterday was what i wanted/craved/was hungry for.

Everyday is different, somedays i eat more and somedays less… it balances itself out over time! As you can tell, i love having lots of different foods for my lunch and/or dinner (i.e lots of vegetables, potatoes, hummus, avocado, beans, sweet corn etc) but usually for snacks (now a days) just keeping it simple works well for me. And i don’t eat snacks everyday, as i wrote in THIS post. Eating 3-4 big meals per day works better for me and usually my big lunches/dinner keep me satisfied for several hours!

Another reason i don’t do full days of eating so often is that 1) it would require me to picture all my food and remember what i ate each day…. which reminds me that several cups of coffee with oat milk were drank yesterday as well as some cauliflower wings being eaten when i made them in the morning 😉

and 2) i eat pretty much the same thing most days which isn’t alot of variation and no point in sharing everyday or every week if it just looks the same – i.e no inspiration for you, haha!

Full day of eating – Monday

Yesterday was a day that i pictured (almost!) everything i ate, so i thought… why not share it on here!

It was a school day (5 hours of own work/study), went to the gym in the morning, went food shopping in the evening! So a pretty standard day for me! And this is what i ate….

I didn’t picture everything – also my lunch was eaten from a lunch box in school … but i can begin taking pictures of how it looks all mixed up in my lunch box when i remember/eating alone hahaha. When i am eating with friends i obviously won’t!!

Also do you want me to do food diaries on a weekly basis even if i won’t picture all my food? I always think i need to share photos of my food… but maybe i don’t? But maybe i shouldn’t even make full days of eating anyway…. hahah, just let me know! 🙂

Breakfast: Soy yoghurt, mix of nuts and raisins & muesli & coffee


Lunch: Mashed sweet potato with peanut butter, so called wheat germ (matvete in swedish!),  panfried tofu (just with oil and salt!), half an avocado, beetroot hummus and broccoli with some sesame seeds!


Snack: 3 pieces of seitan (small prebought/packaged seitan!)

Dinner: Quinoa, more pan fried tofu, sweet and sour sauce and mix of veggies

What i eat in a day – vegan

Yesterday was a day that i actually remember everything i ate, which is very rare for me, haha. But yesterday i posted almost everything i ate on Instagram – which makes it easier to remember. HOWEVER it is not something i want to do daily… i don’t want my social media to be a food diary or “what i eat in a day” everyday. 1) because how much people need is very individual and 2) how much a person eats varies from day to day, 3) it puts too much focus on food when life is so much more than food. It is easy to get obsessed with watching other people’s “what i eat in a day videos” or focusing too much on what people eat, and it is easy to pass the fine line of “entertaining/inspiring” to “Obsessed with food and what others are eating”.

Moving on, i just felt i needed to make that clear! But i might do full day of eating posts every now and then as it is one of the top requested posts… however that is also a little scary that it is requested so often and by so many.

Note… today was a restday and i had pretty much 0 food at home until i went food shopping after school.

Breakfast: Rice pudding, the remaining 1/2 banana, berries, oatmilk and the last of the peanut butter i mixed in. & an energy drink (even my coffee was al gone 😦 )IMG_20171109_100336_838.jpg

Snack: 1 home made snickers bar (after my lecture and before i went food shopping)

Lunch:  Pan fried tofu with oil, boiled brusselsprouts and broccoli, home made hummus, baked sweet potato with tahini and sriracha and half an avocado. (and a few left over chickpeas!)IMG_20171109_160527_476.jpg

Dinner:  Oven roasted broccoli, sweet corn, potatoes, chickpeas, edamame beans, boiled green lentils and some more veggies underneath. tomato/cream sauce on top!20171107_195239.jpg


Snack: Second portion of dinner (alot smaller) with a whole lot of hummus on top!


There you see how i ate yesterday when all i did was go to my lecture, food shop and then be at home and study/netflix!

What i eat in a day – vegan

Via my social media i frequently get asked to post my full day of eating, people always curious to see how others eat, want to know portion sizes and compare their food intake to someone elses. When it comes to full day of eating posts or videos, you have to remember that everyone is different and everyday is different. How i eat one day differs from the next day and so many factors contribute to what i eat in a day such as whether im working or not, what food i have at home, what im craving, how hungry i am etc So somedays i can eat 3 big meals and other days i may snack throughout the whole day. Of course it is recommended to have some form of balance each day and try to eat regularly and the same each day, but that isn’t always how it is in reality!

Yesterday, Saturday, is a day that i actually remember everything i ate.. mostly because i posted almost all of it on my Igstory which i usually don’t do, but i thought i might as well make a post about it here as well as people are always so curious to see what i eat in a full day.

I usually don’t remember everything i eat in a day and don’t keep track or count what i eat, but if this is something more of you want to see on a weekly basis maybe i will do once a day every week a full day of eating post, but it will most likely just be every second week haha. Of course, remember to not compare your intake to mine, but maybe it would be some form of inspiration for meal ideas, i’m not so sure!

Anyway, this was what i ate yesterday:

Breakfast:  Oatmeal, c.a 1,5dl, 1 banana, peanut butter (c.a 2 tbs), 1 kiwi, 1 square of dark chocolate and cashew nuts. & coffee with oat milk

Snack: bowl of popcorn.

Lunch: 2 soya burgers, rice mix, oven roasted carrots, veggie mix, kale salad with olives, pumpkin seeds and edamame beans and beetroots.

Snack: 1 vegan cookie at a cafe & 2 cups of coffee with oat milk.

Dinner: Mix of veggies, pulled oumph, marinated jackfruit, roast potatoe, oat cream & 4 pices of garlic bread.

Dessert: 1/2 of the glass of parfait (recipe in the previous post) – I was far too full from dinner, i.e i had c.a 3 portions, so couldn’t finish the dessert.
